With its vibrant orange hue, firm texture, and a mild flavor, this fresh frozen Coho Fillet is primed for your culinary expertise. Coho salmon is more forgiving to cook to perfection, thanks to its slightly higher fat content compared to sockeye. Its milder flavor and succulent texture are sure to make it a favorite. Each fillet, averaging about 1.4lbs, is perfect for serving up to four people. For optimal flavor and moisture, we recommend cooking to an internal temperature of 125°F.
Please note that these fillets are not boneless. Fresh salmon have very stubborn pin bones, and most machine deboning methods can compromise the quality by either mashing the fresh fillet or requiring thawing and refreezing to facilitate bone removal.
Once you receive your package and thaw the salmon before preparation, the bones will naturally loosen, allowing for easy removal with small pliers or by cutting around them with a knife. A diagram illustrating the “bone strip” is available for reference.
